100 g baby spinach, boiled and drained
1 cup cabbage, thinly sliced, boiled and drained
2 carrots, sliced matchsticks, boiled and drained
1 handful of basil leaves, washed and drained
2 tablespoons chili paste in containers (I pake Cap Ibu)
2 cup grated coconut (may pake dry or fresh)
1 tsp powdered kencur
1 tablespoon coriander, mashed
Galangal, lime leaves and bay leaves to taste

How to Cook Yellow Rice Spices:
Mix all ingredients in saucepan, add the coconut milk. Simmer over low heat while stirring occasionally.

Tips:

Making Sambal Fried Potatoes Ingredients Iris:
500 g potatoes, peeled and diced.

5 pieces kaffir lime leaves, discard the bones and thinly sliced
3 tablespoons chili sauce (substitute ground red chillies)
3 tablespoons soy sauce
50 ml thick coconut milk (kara)
2 slices dried galangal (if using fresh)
2 bay leaves
Oil for frying
How to cook fried Potato Sambal Iris:
Wash the potatoes and drain, then fry in oil until golden brown lot. Set aside.
Reduce the oil in a skillet, then enter the red onion, garlic and ginger, saute until onion is almost dry (yellow), and enter the chili sauce, soy sauce and coconut milk, bring to a boil.
Insert slices of red chilli and lime leaves, give salt to taste, if the flavor is thick turn off the heat.
Enter fries, stir and serve.

Cuisine Tempeh and Tofu Ingredients bacem:

Bahan Membuat Urap Sayuran
100 gr baby spinach, rebus dan tiriskan
1 cup kol, iris tipis, rebus dan tiriskan
2 buah wortel, iris korek api, rebus dan tiriskan
1 genggam daun basil, cuci bersih dan tiriskan
2 sendok makan penuh sambal terasi dalam kemasan (aku pake Cap Ibu)
2 cup kelapa parut (boleh pake yang kering atau segar)
1 sdt kencur bubuk
1 sdm ketumbar, haluskan
Lengkuas, daun salam dan daun jeruk secukupnya

Jika memakai kelapa kering, uapkan (kukus) sebentar.
Panaskan 2 sdm minyak goreng, masukkan sambal terasi, ketumbar, kencur, lengkuas, salam dan daun jeruk kemudian masukkan kelapa, aduk2 sampai tercampur rata.
Berikan garam secukup rasa dan matikan api.
Campurkan dengan semua sayuran, hidangkan segera.
Tips:
Bumbu urap bisa dikukus saja, campurkan semua bahan bumbu lalu kukus sebentar.
Sayuran bisa diganti atau ditambah dengan sayuran apa saja.
Resep Nasi Kuning Rempah
Bahan Memasak Nasi Kuning Rempah :
3 cup beras, cuci bersih dan tiriskan.
1 kotak santan kara, campur dengan air sehingga mencapai 6 cup
1 batang sereh
1 sdt kunyit bubuk
2 lembar daun salam
2 lembar daun jeruk
3 cengkeh
2 cm kayu manis
2 buah kapulaga, memarkan
2 star anise
Garam sesuai selera
Cara Memasak Nasi Kuning Rempah :
Campur semua bahan didalam panci, tambahkan santan. Didihkan dengan api kecil sambil sesekali diaduk.
Jika air hampir kering, matikan api dan biarkan tertutup sehingga air meresap sempurna.
Kukus didalam dandang selama kira2 15 menit, matikan api dan hilangkan uap dari nasi.
Bentuk sebagai tumpeng atau sajikan sebagaimana adanya bersama lauk pendamping.
Tips :
Kalau memang kurang suka dengan rasa rempah, pakai rempah daun saja, hilangkan kapulaga, cengkeh dst.
Tambahkan daun pandan jika ada.
Resep Sambel Goreng Kentang Iris
Bahan Membuat Sambal Goreng Kentang Iris :
500 gr kentang, kupas dan potong dadu.
5 siung bawang merah, iris tipis
4 siung bawang putih, iris tipis
5 cabe merah besar, iris tipis
5 helai daun jeruk, buang tulangnya dan iris halus
3 sdm saus cabe (pengganti cabe merah giling)
3 sdm kecap manis
50 ml santan kental (kara)
2 iris lengkuas kering (kalau ada pakai yang segar)
2 lembar daun salam
Minyak untuk menggoreng
Cara Memasak Sambal goreng Kentang Iris:
Cuci kentang dan tiriskan, lalu goreng dalam minyak banyak sampai kuning kecoklatan. Sisihkan.
Kurangi minyak dalam wajan, lalu masukkan bawang merah, bawang putih dan lengkuas, tumis sampai bawang hampir kering (kekuningan), lalu masukkan saus cabe, kecap manis dan santan kental, didihkan.
Masukkan irisan cabe merah dan daun jeruk, berikan garam sesuai selera, jika bumbu sudah kental matikan api.
Masukkan kentang goreng, aduk rata dan sajikan.

Bahan Masakan Tempe dan Tahu Bacem:
1 papan tempe (400 gr), potong 10
1 papan firm tofu (500 gr), potong 10
5 siung bawang merah beserta kulitnya
3 siung bawang putih beserta kulitnya
1 sdm ketumbar, haluskan (kalau sekalian pake blender sukanya gak halus)
200 gr gula merah
2 sdm asam jawa
Garam sesuai selera
Air secukupnya
Lengkuas dan daun salam
Cara Membuat Tempe dan Tahu Bacem:
Atur tempe dan tahu didalam panci/wajan.
Tuangkan bumbu halus dan tambahkan air secukupnya (sampai tempe dan tahu hampir terendam seluruhnya. Berikan garam sesuai selera
Tambahkan lengkuas dan daun salam kemudian rebus sampai air saat.
Angkat dari api dan dinginkan.
Goreng dalam api sedang dan minyak banyak sampai kecoklatan.
Sajikan
Tips :
Jika ada, air rebusan bisa menggunakan air kelapa. Rasanya akan lebih mantap.
Bikin sekalian banyak, bisa dijadikan snack atau pendamping lauk utama (untuk maksimal 2 hari) Goreng sesaat sebelum disajikan.
Resep Ayam Goreng Kemiri
Bahan Untuk Membuat Ayam Goreng Kemiri :
1 ekor ayam, potong kecil (12-16 bagian)
7 siung bawang putih
1 1/2 sdm ketumbar
7 butir kemiri
Garam
Cara Membuat Ayam Goreng Kemiri:
Haluskan semua bumbu bersama 200 ml air, campurkan bersama ayam, berikan garam.
Rebus ayam dengan api kecil supaya bumbu meresap sempurna.
Jika air sudah saat, angkat dari api dan dinginkan.
Goreng sesaat sebelum disajikan. Sajikan dengan remah bumbu yang ikut tergoreng.
Tips :
Jika ingin membuat kremes, jangan direbus sampai air saat. Sisakan 100 ml air rebusan, tambahkan 1 sdm tepung self raising dan goreng sampai kecoklatan.
